Join veteran professional Chef Michael Kirkwood for an in-depth introduction to whole animal butchery. In this 'hands on' butchery class students will be breaking down a whole pig (large sized). All the methods and practises used in class can be used at home. The class will include the preparation, sharing and tasting of recipes.  Wine & beer will be served with dinner. Students will be taking home any additional food product.
